You need:

1 lb. topside steak (minced), 2 eggs,

1 medium-sized onion,

2 cups stale bread (do not use crust),

1 cup. water,

1 bunch chopped parsley,

juice of 1 lemon.

1 teaspoon of thyme

flour

pure olive oil

pepper and salt to taste.

METHOD:

Place minced steak in a basin and add two eggs, chopped parsley, lemon juice, bread, water, thyme, pepper, and salt.

Chop onion up finely and place in a frying pan, and brown with 2 tablespoons of olive oil.

Add onions to mixture in basin and mix well.

Allow to stand for half an hour.

Then place mixture, which has been rolled to the size of a walnut, into the flour and drop immediately into a frying-pan of hot olive oil or fat (preferably oil).
